Why Tomahawk?
In 1927, a Texas Shorthorn named Tomahawk claimed the title of Grand Champion at the International Livestock Exposition. Tomahawk was purchased by our family for the publicity. They owned a number of restaurants, and purchasing an International Grand Champion was a great way to show discerning guests that they were serious about their beef.
Today, Tomahawk remains our symbol of success in hospitality. Being able to buy your own steer is probably not the goal of your business, but to us, Tomahawk is a measuring stick. Can your business currently give you a ‘Tomahawk’ moment? Our goal is to help you do just that.
Our Team
Peter Sebastian is the Founder, Managing Partner, and Lead Consultant for THC. Peter started in hospitality the way many do, by bussing tables. He has held nearly every position imaginable in the restaurant business. To date, he has opened 12 distinct restaurant concepts from scratch, and is a current owner-operator of 3 unique hospitality brands in the Minneapolis-Saint Paul metro area, with plans for more. Peter has been a leader in hospitality for 2 decades, and has consulted on a number of projects in and out of the restaurant industry.
